Into the Wild — Sake & Sour Symposium at Brooklyn Kura

Brooklyn Kura – New York’s only sake brewery and taproom – is teaming up with the renowned wild and sour producers of New Belgium Brewing for a one-night-only Sake & Sour Symposium as part of Good Beer Hunting’s Into the Wild nationwide experiential event series. 

On Thursday, December 5th from 7 - 10pm at Brooklyn Kura’s Industry City Taproom (68 34th Street, Brooklyn, NY), guests will explore the diversity and breadth of the sake and wood-aged sour ale categories with a fermentation-driven tasting menu.

The evening will be a complimentary, invite-only event and include tastings of four Brooklyn Kura sakes, including the fan-favorite #14, alongside four dynamic New Belgium wild and sour ales presented by their Wood Cellar Director and sour pioneer, Lauren Limbach. The sake and sours will be presented with a selection of four small plates, which will reflect the evening’s fermentation-focused theme.

Event guests will also experience a rare behind-the-scenes look at Brooklyn Kura’s sake-brewing process with a short brewery tour led by co-founders Brian Polen and Brandon Doughan.

About Brooklyn Kura 

The first sake brewery in NYC, Brooklyn Kura is dedicated to crafting and serving high-quality sake and building community around the storied beverage. Respecting the Japanese sake brewing traditions that have evolved over a thousand years, founders Brian Polen and Brandon Doughan are inspiring interest in the ancient beverage with the application of unique American ingredients and a passion for the process. 

The Brooklyn Kura brewery and tap room in Industry City, Brooklyn is open from Friday through Sunday and offers a one-of-a-kind sake tasting experience. Resident sake sommeliers Sam Barickman and Nana Paturet seek to make both sake novices and connoisseurs alike feel welcome in the space, educating and pouring for visitors in an open and relaxed environment.  

While enjoying a close-up view of the moromi (sake mash) tanks in action, guests are invited to taste a rotating menu of sake on draft (sold by the glass or carafe), along with tap room exclusives, including shiboritate and moromi. To accompany the beverages, Brooklyn Kura also serves a curated menu of small plates, including toasted nori, grilled cheese, fried fava, and charcuterie and cheese plates. The tap room is also home to regular sake-focused programming, including a monthly "Sake Basics" class, regular tastings, chef collaborations, and culinary pop-ups.

Join us as one of only 40 guests to help New Belgium and Brewery Bhavana create our very first collaboration beer. Taste through four unblended sours, pulled directly from four separate New Belgium foeders and Brewery Bhavana’s wood cellar, to help us decide on the final blend, which will be released in cans later this year. Build a wildflower bouquet, eat your fill of dim sum, and savor some of our favorite past releases (including New Belgium’s L’amour en Cage, a golden sour refermented on golden gooseberries) while listening to music from Andrew Thiboldeaux and wandering through Bhavana’s wood cellar.

An evening of collaboration between New Belgium, Videri Chocolate, and Black & White Coffee. Try the coffee, taste the chocolate, sip the sour, and be the first to drink the Coffee Chocolate Sour.

50 lucky guests will have the opportunity to reserve a bottle of the final collaboration beer once it's released in Raleigh in January. The event will be complimentary.

Enjoy a four course dinner prepared within the confines of a classic Austin food truck and paired alongside wild & sour ales from New Belgium. On top of that, you’ll hear songs and stories of the wild from a true Texas wild one – Tony Drewry and his band, Shotgun Friday. Each course will be presented by Chef Justin Bruce Turner and New Belgium Blender, Lauren Limbach.

Into the Wild — Sacred & Profane Dinner at The Brewer's Table

Join us for a multi-sensory fermentation-forward dinner at The Brewer’s Table with New Belgium and Good Beer Hunting as part of their nationwide Into the Wild tour.

This experimental event series brings together leading chefs, brewers, and artists for one-of-a-kind beer and food experiences, challenging drinkers’ preconceived notions.

We’ll guide diners through a 5-course meal featuring preparations from world-renown fermentation expert Jason White, formerly of the Noma Fermentation Lab in Copenhagen.

We’ll pour wild ales from New Belgium, the oldest continuous sour wood cellar program in the country, joined by blender Lauren Limbach, as well as beers from The Brewer’s Table's all-wood fermentation brewery, as we explore each dish and glass at the molecular level.

A wild-ale-inspired light projection show, musical performances, world-class experimental dishes, and iconic beers. This is a once-in-a-lifetime beer dinner.
