On a recent pop-in at Off Color, just a short walk from our studio in Chicago, John Laffler is excited to show us what's happening at the bottom of an open fermenter in his cold room.
"I submitted a label with the word 'sake' on it, and it got approved," he says. "I was surprised. They said, 'Oh, that's fine, you're allowed to make sake.' So now I'm making sake."
