Monkish Brewing Co.'s owner, Henry Nguyen, is a complex dude. As my thoroughly Midwestern dad would say, "He's a tough nut to crack." Over the past few months, I've visited Monkish a number of times, each one getting to know Nguyen a little better, slowly trying to crowbar my way into his head.
We've shared beers. We've shared oysters. Cocktails. Coffee. Ramen. And stories—tons and tons of stories. Through it all, I'm not sure I've gained any sort of insight into Nguyen's approach to brewing. (Then again, I'm not sure anyone can really get a handle on that.) But I've definitely glimpsed the world through his eyes, if only for a fleeting moment.
