Dryhop Brewers brewpub in Chicago's dense Lakeview neighborhood just promoted their sous chef Joel Pillar to the executive role. He's busting out of the kitchen with a few new dishes this month, including a skillet mac-n-cheese with smoked cheddar and sunny-side egg, a bone-In pork chop with sautéed shard, cannelli beans, and their Shark Meets Hipster wheat IPA pan sauce, and the dish being plated above: an olive and cheese curd mix, with a citrus marinade, salami, and peppadew peppers. Wash it all down with a Batch 001 Ale and set your weekend sailing.
