I sit down with a coffee guy, Collin Moody, a store manager for Intelligentsia here in Chicago. He’s taught me so much about the world of coffee, ironically enough, usually over a beer or two. He’s a guy that embodies the craft ethos, exploring his palate through the food and beverage world, and everything he’s learned from tasting coffees over the years, he’s translated wonderfully into beer. He’s got a knack for describing flavors, he reads up on process — he’s exactly the kind of person I hope to see more of on the beer side of things in the coming years, as we go beyond the bottle to understand the agricultural process behind each brew, the ingredients, the flavors.
