The quality control lab at Allagash employs non-invasive laser technology to take total and partial CO2 headspace readings, as well as the total dissolved CO2 levels, in all the beers they release. It's pretty serious, nerdy, important stuff—with more than 5000 U.S. breweries currently in operation, quality is essential. Allagash bottle conditions it's beers, which makes it even more critically important to nail those CO2 levels. The folks—and shark—who run this lab make sure that happens every time.
