I expect this to be Chicago's best new brewery in 2015 by a long shot. Today, Brian Taylor got his brewhouse, and the days of Whiner Brewing Co. are upon us. Saison, sour, barrel fermentation experimentals, and a host of Belgian-inspired, yeast-driven and hop-forward ales await.
Brian has been heavily involved in making The Sisters line-up, among other beautiful things, at Goose Island. And now he's dropping down that rabbit hole with a 30-barrel system of his own installed at The Plant on Chicago's south side.
And he's got some of Chicago's smartest and most creative people at his side in Ria Neri (former buyer at Banger & Lace and Trenchermen).
Congrats Brian. Don't hold your breath too long with that Mash Tun grazing the door jam.
