Last fall we joined a group of passionate beer people, including a chef, a few writers, and local Czech beer experts on an adventure through Prague and Pilsen. The trip culminated in one helluva tour of the Pilsner Urquell brewery, including some exploration of their famous-but-locked-away water tower and what remains of the crumbling barrel caves where they still practice a small amount of open fermentation and barrel conditioning.
It was a fundamental beer experience straight out of the history books, even as this brewery continues to modernize and produce one of the world's most famous beers. I'm getting ready to tell you all about it — but I couldn't wait to share this particular image with you all in the meantime.
