It’s SPON Day 2018, Jester King’s annual release of their spontaneously-inoculated beer, and the mood is celebratory. We’ve been swapping stories and beer huddled around a heater on the patio before my buddy—who, as previously established, is a passionate debater—Chris asks us to follow him out back.

“Can I tell you about the importance of aeration?” Chris asks as he fiddles with a box of still Lambic.

He’s setting up shop to long-pour us some Oud Beersel Rabarber Lambiek. As we each approach his station, Chris’ movements are strategic: check the wind and the telemetry of the earth, then gift each person with one perfect pour.

I think I now understand the importance of aeration.
