I like the breweries where I can tell there's a person, usually the founder or brewmaster, who walks around with the whole thing in their head all day. The physical space is a manifestation of the mental and spiritual space of an individual, and these folks are usually surrounded by satisfied employees who can share in the clarity of the vision. Three Taverns founder Brian Purcell is one of those folks who's building something on a much longer timeline than most—perhaps even timeless. And you can see it in his eyes.
