The Promontory, a new cocktail and wine-focused restaurant and music venue in Hyde Park opened its doors this past month. The menu updates a few "Historical" dishes — recipes you probably remember your parents ordering — like Osso Bucco and a Kentucky Burgoo stew with pork collar, quail, house made rabbit sausage, haricot vert, hominy, charred corn, and stewed tomato broth.
A familiar face is in the kitchen. Chef Matthew "Skittles" Sliwinski from Longman & Eagle made the move to the south side alongside Chef Jared Wentworth. Skittles made breakfast for the band of wildboys we took into the woods of Wandawega last year. This guy knows how to fill a belly.
